New steakhouse Cut 132 set to open in Easton's 'luxury section'
A trendy new steakhouse from Virginia-based Thompson Hospitality Group is set to open on Jan. 23 at Easton Town Center.
At 4188 Brighton Rose Way, Cut 132 is on the ground floor of the Aloft Hotel, across from Restoration Hardware in Easton's New District.
The restaurant is in line with the "traditional, great American steakhouse," Michael Katigbak, vice president of marketing for Thompson Hospitality, said last fall, but with modern decor and interior features, as well as its menu.
The space, which seats 252 people, includes a dining room, private room and lounge areas, an indoor-outdoor bar and garage doors which will open to a forthcoming patio. Michael Krebs, operating partner at Cut 132, said the patio should be open by this spring.
The steakhouse is in a newer, luxury-focused area in the shopping center that includes Arhaus and Jet Edge International, an aircraft rental service, Krebs said.

"We're kind of anchoring the [new] area of Easton, where it's concentrating more on luxury," he said. "This is becoming the luxury section of Easton. And with the condos that are coming up, it's just going to become even more so."
However, Krebs describes the team as "respectful" but not stuffy, dressed in dark jeans rather than slacks and ties, another element of the steakhouse's modern take.
The menu includes starters such as crab cakes, pork belly, tomato and cucumber salad; charcuterie boards featuring artisanal cheeses, meats, pickles and spreads; wet and dry-aged beef with handmade sauces and toppings; and sides like truffle mac and cheese with seasoned breadcrumbs and fried-twice hand-cut fries.
The menu will also incorporate seasonal ingredients and a few touches that add to the restaurant experience.
That includes "bumps and bubbles," a bump of osetra caviar with a sip of Jamun champagne, and the "cowboy luge" where the steakhouse's bone marrow dish is paired with Watershed bourbon that a server pours down the leftover bone, which acts as a luge to coat the liquor in beef fat.
The restaurant also offers cocktails, including the "Cut and smoked old-fashioned," made with Makers Mark 46 bourbon, maple syrup, cocktail bitters, custom ice and applewood smoke and served out of a whiskey decanter.
The "prescription for peach," a peach lemon drop martini inspired by the Prohibition era when alcohol was prescribed, made with Haku Japanese vodka, white peach syrup, Cointreau, Chambord and a gold lemon, is served with a flask inside a hollowed-out book, for guests to "start their story. The cocktails also include variations of margaritas and other standard drinks.
While several Easton restaurants, such as McCormick & Schmick's, serve steaks, Cut 132 will be the center's only traditional steakhouse after Smith & Wollensky left Easton on Jan. 14.
Thompson Hospitality was founded in 1992, is Black-owned and calls itself the nation's largest minority-owned food-service company. The company serves historically Black colleges and has restaurants in Maryland, Virginia, South Florida and Washington D.C.
Thompson Hospitality operates 68 restaurants and 16 concepts and will operate nearly 100 restaurants by the end of 2023, including two more restaurants to come in the Central Ohio area. The company operates a wide range of concepts that could come to the Columbus market including a by-the-slice pizzeria, gourmet burger spot and fast-casual seafood restaurant.
Hours are Monday through Thursday, 4 p.m. to 9 p.m., Friday, 4 p.m. to 10 p.m., Saturday, 11 a.m. to 10 p.m. and Sunday, 11 a.m. to 9 p.m. The bar is open until 12 a.m. on Friday and Saturday. Reservations are available on Open Table.
