Cake of the Day: Avocado Ricotta Olive Oil Cake with Dark Chocolate Chunks

The name of today’s cake is already reason enough to run to your grocery store and start baking. With the avocado craze in high gear, people want it on and in anything and everything and that includes cakes! It looks like a normal brown loaf from the outside, but as soon as you slice away, the inside reveals a natural green tint of moist cake and flecks of dark chocolate. The recipe also uses familiar ingredients that you may already have in your fridge and pantry — avocado, ricotta, olive oil, and chocolate. The recipe comes from Jennifer Rodda in Victoria, Australia, and her food blog Milk and Honey. Curious how this recipe came to be? Rodda loves cake, simple as that. “You know you’re cake-obsessed when you find an avocado and a wedge of fresh ricotta in your fridge and the first thing you think to make is cake rather than dip,” she writes.
Rodda starts by blitzing ricotta cheese and one large avocado in a blender until smooth. She then combines the ricotta-avocado mixture with butter, sugar, olive oil, vanilla, and eggs in an electric mixer. After the dry ingredients are incorporated, she folds in dark chocolate chips and pours the batter into a cake pan. It bakes for an hour in the oven and then Rodda uses a toothpick to see if the cake is done. When it comes out clean that means the cake is ready to be served and devoured.
