Banana bread gets a makeover in this beautiful bundt cake that’s covered in a luscious brown butter glaze. New York’s Samantha Seneviratne of baking blog Love, Cake is behind today’s dessert.
“Cinnamon and cardamom are in my blood,” the talented baker of Sri Lankan descent says. Seneviratne has worked as a food editor for Good Housekeeping, Fine Cooking, and Martha Stewart’s Everyday Food. But besides writing she also knows how to work a camera. This is what led her to her write first cookbook, The New Sugar and Spice that comes out this fall with Ten Speed Press.
In her bundt cake recipe, she uses ripe bananas, bittersweet chocolate, and sour cream which creates a super moist cake. She browns unsalted butter in a skillet, and adds it to an electric mixer bowl with cream cheese and confectioners sugar. For a thick and drippy glaze, she beats in a little milk which she then drizzles all over the cake.
“It’s a tasty cake. I think you’ll like it. We like it. So much so that I haven’t even bothered to wrap it up,” she says. Taste what she means and head over to Love, Cake for the recipe.
