The Imploding Honey Custard Cake

Mandy Lee is angry. She calls her blog, Lady and Pups, her “misery outlet.” She writes: “Three years ago (and counting) I moved from New York to Beijing, which marked the beginning of my pre-midlife crisis… This little project is a phoenix rising out of the tormenting flames of living here with all its misery. Now: the cake.
Traditionally a Portuguese sponge cake known as a Castella cake, Lee undercooks it slightly, ending up with a soft, airy cake oozing with honey custard. The best part: Even the least stocked pantry will have the minimal ingredients it takes to make. Check out her recipe for more.
