The Kitchy Kitchen's Cauliflower Gratin Recipe

Cauliflower Brie Gratin
Serves 6 to 8
This flavor combination is bananas. Not like, actual bananas, just bananas in that exclamatory/awesome way. Brie + anything is always delicious, but I especially love it combined with the delicate flavor of the cauliflower. This dish is also fantastic with parsnips. So decadent and kind of an undercover favorite of mine. Enjoy!
2 cups whole milk
3 bay leaves
2 sprigs fresh thyme, plus more to finish
2 garlic cloves, chopped
2 oz. unsalted butter
1/4 cup all purpose flour
4 oz. Brie, rind removed
1/2 tsp. freshly grated nutmeg
2 lb. cauliflower, cut into small florets
Salt and freshly ground black pepper
Preheat oven to 375 F.
Simmer the milk, bay leaves, thyme, and garlic for about 15 minutes, then turn off heat. Strain, and set aside. Meanwhile, in a medium pot, melt butter and flour together, stirring to form a paste. Very slowly add the milk, whisking as you go, to form a luxurious sauce. Add the Brie and nutmeg, and continue stirring. Pour in the cauliflower and stir to coat. Season with salt and pepper and spoon into a dish. Bake for 40 minutes, or until bubbly and the cauliflower is tender. Cook for 10 minutes longer if still a little crunchy. Serve hot.
