The Perfect, Three-Ingredient Roast Chicken
Our method for trussing chicken, shown in the video, might take some practice, and leaving it in the fridge might take some patience, but both are worth it. Tying the bird tight will keep the meat juicy, and drying the skin will ensure it’s crispy.
One 4-5 pound chicken
Kosher salt
Fresh cracked pepper
Place chicken on a sheet tray with a wire rack. Refrigerate, uncovered, for at least 6 hours or overnight.
Remove chicken from refrigerator and allow to come to room temperature, about 40 minutes. Meanwhile, preheat oven to 450° F.
Sprinkle cavity with salt and pepper. Truss. Sprinkle outside of chicken generously with salt and pepper.
Place chicken on a roasting pan with rack. Roast about 1 hour and 15 minutes, or until the internal temperature reaches 165° F. Rest for 15 minutes before carving.
