Our Best-Ever Filet Mignon Recipes
The ultra-tender, lean cut definitely has its place and is worth getting to know at home.
While it might not be in vogue to order filet at a steakhouse sometimes, thanks to coveted aged rib eyes and tomahawks, the ultra-tender, lean cut that is filet mignon definitely has its place and is worth getting to know at home. Here are some of our favorite filet mignon recipes for a solid steak dinner.
Steak Diane
When planning the reopening of the Emeril's Delmonico in New Orleans, Emeril Lagasse wanted to bring back the tableside service that was so popular in dining rooms long ago. Steak cooked Diane-style has come to mean sautéing thinly sliced or pounded filet mignon in butter and then flambéing and basting it in a rich Cognac sauce; Lagasse adds sliced mushrooms to the pan for more rich flavor.
Beef Tenderloin Sandwiches with Norton-Shiitake Sauce
At the former Riddle's Penultimate Cafe & Wine Bar in St. Louis, chef and owner Andy Ayers combined grilled strips of filet mignon and organic shiitakes from Ozark Forest Mushrooms's farm in Salem, Missouri, to these meaty, garlicky sandwiches with a wine-spiked sauce.
Shaking Beef
Serve this sweet and vinegary Vietnamese dish, from Charles Phan of the Slanted Door in San Francisco, simply with an easy soy-based sauce and lime wedges.
Sparks' Sautéed Filet Mignon with Yellow Tomato Vinaigrette
This is a great seasonal steak recipe because it calls for two summer staples: tomatoes and basil. Grilled asparagus and grated citrus zest keep it fresh and bright.
Wok-Seared Steak Majong with Shishito Peppers
For this brightly flavored stir-fry, chef George Chen of San Francisco’s China Live combines crunchy, spicy shishito peppers and pieces of tender beef the size of mah-jongg tiles.
Creamed Spinach–Stuffed Filet Roast
Ultratender filet of beef gets rolled around creamed spinach in this fun and delicious play on a classic steakhouse pairing.
Beef Medallions with Bacon and Morels
Replace the ultra-lean steak teres major with filet mignon for this 35-minute meal for four. Medallions, morels, and Madeira make for a beautifully balanced steak meal paired with bacon and Barolo.
