Breakfast Pizza Is the Weekend Recipe You Deserve
For the last year or so, I keep seeing breakfast pizza on brunch menus in NYC. But they all use pizza dough as the base, and then turn it into breakfast by topping it with eggs and bacon instead of pepperoni. I wanted to make my breakfast 'za even more breakfast-y, so I decided to make the crust out of shredded hash browns.
The hash browns are next level. You make a crust by tossing the spuds with two eggs (binder) and cheese (flavor) and then forming it into a circle. Bake that until crispy, then add your toppings. I went with traditional breakfast ingredients like bacon, eggs, and cheese, but you can really do whatever you want—tomato sauce, eggs, and breakfast sausage will be my next experiment.
If you want a runny yolk, bake the eggs 15 minutes. If that grosses you out, keep it in the oven for more like 20. No matter how you slice it, this thing is delicious.
