As an avid lover of anything sweet (especially pastries), I constantly find myself jumping down the rabbit hole, searching for my next sweet tooth fix. From the classic chocolate chip cookie to 150-year-old vintage cookie recipes, I'm always down to give a new recipe a try and honestly, it's been a joyous test of my abilities to do my baking at home.

While I can't say that I'm an at-home pro just yet, once I saw Cher's recipe for her mom's cheesecake, I knew this was one I had to give a try. A recipe for my favorite dessert that an icon herself can't get enough of? Sign me up expeditiously! So, I made a quick trip to the store to grab what I needed and got in the kitchen to see if this recipe would really make me believe in life after loving it.

Ingredients for Cher’s Mom's Cheesecake

For this recipe you'll need the following ingredients: unsalted butter, graham crackers, sugar, eggs, cream cheese, vanilla extract and sour cream.

How to Make Cher’s Mom's Cheesecake

Start by preheating your oven to 325°F. While the oven heat up, make the crust. Start by crushing up your graham crackers in a large bowl. Then, mix together the melted butter, crushed graham crackers and sugar. Using your hands, evenly press the graham cracker mixture into a pie dish. Bake for 5 minutes.

To make the filling, combine the eggs, cream cheese, sugar and vanilla in a large bowl. Using an electric mixer or whisking by hand, mix until smooth. Pour the filling into the prepared crust and bake for 15 minutes. Let cool for 30 minutes on the counter.

For the topping, you'll combine sour cream, sugar and vanilla. Spread it lightly over the cheesecake and bake for 5 more minutes. Remove from the oven, let cool at room temperature for 30 minutes and refrigerate at least 8 hours before serving.

What I Thought of Cher's Mom's Cheesecake

If I'm being honest here, I wasn't sure how this was going to come out, but I'm so glad that I gave it a try. This was one of the best recipes I've baked up in a while and I can see why Cher loves it so much! With a nearly perfect crust and a rich and creamy filling, I can see myself replacing this cheesecake with my regular option I pick up from The Cheesecake Factory if I have the extra time.

It's super easy to make—the hardest thing is waiting the 8 hours (or longer, depending on how cold your fridge gets) until it's done setting. The only thing I think that would take this one up a notch is to add a fruity topping. Strawberries are my preferred cheesecake partner, so next time I'll add some sliced fresh berries on top.

Tips for Making Cher’s Mom's Cheesecake

  1. Set aside some time. Before starting this recipe, keep in mind that cheesecake has to chill for at least 8 hours. And depending on your fridge and how cold it gets, it could be more than that. Be sure to give yourself enough time when making this one.

  2. Use an electric mixer. Sure, you can whisk the filling, but an electric mixer makes the job easier and will give you smoother results, which is the name of the game when it comes to cheesecakes.

  3. Experiment with your toppings. Since this is a plain cheesecake recipe, it's easy to build upon. Add on some strawberries, blueberries or whatever you'd like on top to make it your own.
