I also recommend using a block of cheddar instead of pre-shredded; the latter may result in a grainy sauce.

Ingredients:

  • 8 oz. pasta (you can use whole wheat, chickpea or regular pasta)

  • ? cup cottage cheese, 4% milkfat

  • 1 cup milk, 2% (whole or skim also work)

  • 1 Tbs. cornstarch

  • About 1 cup shredded sharp cheddar cheese

  • ? tsp. salt

  • ? tsp. pepper

  • ? tsp. garlic powder

  • ? tsp. paprika

Directions:

  • Total Time: 15 minutes

  • Yield: 4 servings
