Lazy Peach Cobbler
Ingredients:
4 cups fresh ripe peaches, pitted and sliced
1 stick unsalted butter
1 cup self-rising flour
1 cup sugar
1 cup milk
1 tsp. vanilla extract
Ice cream (for serving)
Directions:
Yield: approximately 6 servings
Preheat oven to 350°F. Place butter in dish and allow to melt in oven.
In bowl, mix ? cup sugar with peach slices. Set aside.
In second bowl, whisk together flour, ? cup sugar, milk and vanilla. Pour mixture over melted butter — don't stir to combine. Spoon peaches into batter — without mixing.
Bake 40 minutes or until golden brown and bubbly.
Let cool 5 minutes and serve warm with ice cream.
