Little Big Town’s Kimberly Schlapman makes Reese Witherspoon’s chicken pot pie casserole recipe: ‘It’s delicious, y’all!’
Little Big Town singer Kimberly Schlapman loves cookbooks. One of her favorites right now is Reese Witherspoon’s Whiskey in a Teacup, and she recently showed Yahoo Life how to make Reese’s take on a classic dish – chicken pot pie.
“In Reese’s cookbook, it’s called the chicken pot pie casserole, which I love,” Kimberly shares. “That’s so Southern.”
The recipe is simple but with a twist. It calls for hash browns, which are lined on the bottom of the casserole to form a delicious, crispy crust.
“I had never seen hash browns included in a chicken pot pie recipe until this one,” Kimberly says. “And I love it. It’s so, so yummy.”
Kimberly is also the author of her own cookbook, Oh Gussie! Cooking and Visiting in Kimberly’s Southern Kitchen and the host of the TV series, Kimberly’s Simply Southern.
