Mimosa Cupcakes = Your Excuse For More Bubbly

Mimosas may be a weekend affair, but mimosa cupcakes are (or should be) an everyday type of thing. They work for just about any occasion! Bored and want to bake? Need to bring sweets to the office? Friend just turned 21? Yup, yup, yup. There's nowhere you can bring these where people won't completely swoon over them.
Unsurprisingly, what makes them so so good is the bubbly (obviously). It, along with some fresh orange zest, is in the cupcake batter and the frosting. For the cake mix, champagne (or prosecco) replaces the water, and in the buttercream, it replaces the heavy cream (or milk). In both places, it adds a bright pop of flavor mimosa lovers will appreciate.
Don't wait until the Saturday's brunch to make them. Bake a batch tonight.
