You Can Now Buy Millennial Pink Lettuce
Your salads are about to get so much more Instagram-worthy. In case you haven't already heard, pink lettuce - excuse me, millennial pink lettuce - is the latest food craze that you're bound to see all over your social media feeds soon enough.
According to Eater, the lettuce in question is called Radicchio del Veneto, aka La Rosa del Veneto. It's a pink chicory grown mostly in parts of Italy, but you can also find it in California, Pennsylvania, and other states. The plant develops its pink color by being "forced," which basically means that it's grown for a certain amount of time, harvested in the fall, then replanted and grown in the dark.
We know that eating salads gets to be pretty boring after a while, and there are only so many ways that you can liven up a bowl of greens. You may have rolled your eyes at all the other millennial pink food trends that have arisen in the past few months but, tbh, it wouldn't be so terrible if this one actually stuck around for a while. You can buy the lettuce at Whole Foods and some farmers markets, but if you're in the New York area you can also find it on the lunch menu at King in Soho.
