Most mornings I stick to a pretty boring breakfast routine that alternates between Greek yogurt and oatmeal. It's not flashy or Instagram worthy, but it is enough to keep my stomach grumbling before noon. On weekdays, breakfast can be more of a utilitarian meal, but on the weekend we like to let loose and let our breakfast freak flags fly with all things rich, greasy, and well, sometimes unhealthily extravagant.
These red velvet cupcakes scream "make me this weekend! Never get out of your PJs! Binge watch Netflix!" They're kind of like the devil on your shoulder only way more satisfying. The coolest part about them is they couldn't be easier to make with boxed cake mix. Besides that, all you need for the batter is eggs and milk. It comes out the perfect waffle batter consistency and cooks in a waffle press without any issue.
What really takes these waffles over the edge is their cream cheese icing. It's a combination of powdered sugar, milk, and cream cheese and it just can't lose. It's the perfect pairing for the waffles and takes a special breakfast to an EXTREME breakfast. Sound too indulgent? Don't worry, you'll make up for it with oatmeal next week.
