3 QUESTIONS
...about easy, nutritious fall dinners
Figuring out your meal plan for the week? I asked Greta Caruso, who co-created The Green Spoon with Fanny Singer, about the pair’s recommendations for delicious fall dinners.
Lily: I’m always trying to add more vegetables into my diet. What’s a simple way to do that?
Greta: Eating seasonally is a great way to eat vegetables when they taste their best. In the cozy fall and winter months, we love adding this “pesto” sauce to pasta by slow-cooking broccoli with olive oil and lots of garlic until it’s fall-apart tender.
Lily: How can I make this pesto appealing to picky eaters?
Greta: One of our favorite things about this recipe is that you can add layers of flavor with chili flakes and anchovies, or you can keep it simple for eaters who are a little less adventurous.
Lily: Any other go-to recipes that will feed the whole family on a busy night?
Greta: Our polenta “pizza” is great since it can be made with a handful of pantry staples: polenta, canned chickpeas or cannellini beans, good olive oil, high-quality canned tomatoes and tomato paste.
