Inspector's notes:

  • Food stored on floor in walk-in freezer

  • Improperly stored chemicals. On counter near food contact surfaces

  • Dating and labeling not in use

  • Dirty wiping cloths stored in three-compartment sink

  • Approved thawing method not used. Thawing boxes of turkey croissant sandwiches on counter still in temp so inspector had the kitchen help move them to the walk-in refrigerator.

  • Sinks have crumbs and sticky substance on them. Microwave and can opener left dirty.

  • Counter surfaces have adhered food on them. Cabinet doors splattered with food drippings.

  • Floors under equipment need to be cleaned.

Inspector's notes:

  • True reach-in refrigerator contents — shrimp, sausage, chicken — were at 52 F when 41 F or below is required, and were discarded. Make table by stove contents were at 55 F — chicken, shrimp, cut vegetables — and were discarded. Sushi make rail contents were at 62 F — beef, chicken, shrimp, raw egg — and were discarded.

  • Several cooling units did not have thermometers. Cooling units containing time/temperature control for safety foods must have accurate and readily visible thermometers available.

  • Discard 6# can of bamboo shoots and 6# can of water chestnuts due to rim damage. Rim or seam dented cans must be discarded or returned to distributor.

  • Hand-washing sink at sushi bar did not have soap. Hot water, soap and paper towels are required for proper hand-washing.

  • Roaches were observed in the dry goods storage area. Missing ceiling tile in the kitchen and worn/broken rear door sweep allow easy pest entry and must be repaired or replaced.

  • Moist wiping cloths were being stored on several food preparation surfaces. Wiping cloths must be stored in a labeled bucket of sanitizer when not in use to prevent pathogen growth.

  • Food was stored on the floor of the walk-in refrigerator. Food must be stored at least 6" above the floor to protect from sources of contamination.

  • Beef was thawing in water in the sink. Thawing must be done under running water 70 F or less, in the refrigerator, in a microwave, or as part of the cooking process.

  • Ice scoop was stored on a milk crate beside the ice machine. Ice scoops must be stored on a cleanable surface such as a pan, food grade bucket, or an ice scoop rack. The can opener blade has dried food build-up on the blade and must be cleaned and sanitized.

  • Plastic light shield on one of the fixtures in the kitchen is missing. Proper shielding is required to protect against contamination or injury in case of bulb breakage. Men's and Women's restrooms must have signs reminding employees to wash hands before returning to work.
